Have a basin of iced water ready before you begin. Finely slice or shred the cabbage and carrots soaking it in the ice cold water after each slice. Strain the pineapple tidbits and the raisins. Then strain the shredded cabbage and carrots. In a large bowl or basin, toss altogether the cabbage, carrots, tidbits, and raisins. Sprinkle the salt a teaspoon at a time while tossing. Let stand for around 15 minutes so liquid will be released. Strain again. You may also use a clean cheesecloth to dry the ingredients. Place ingredients back in basin, add the mayonnaise and toss. Sprinkle with pepper if you desire.
