Tuna and Mixed Veggies Pasta Bake
INGREDIENTS:
1 TBSP. OLIVE OIL
1 ONION CHOPPED
250G. WHOLE MEAL MACARONI OR PENNE
200G TUNA IN CAN, WELL DRAINED and FLAKED
400 G. CAN TOMATOES
125G. COOKED MIXED FROZEN VEGGIES
125G. COTTAGE CHEESE OR RICOTTA CHEESE
2 TBSP PLAIN YOGURT
75G. WHOLEMEAL CRUMBS OR DRY BBREAD CRUMBS
DIRECTIONS:
1. HEAT THE OIL IN THE NON-STICK FRYING PAN, ADD THE ONION AND FRY FOR 5MINS UNTIL SOFT.
2. MEANWHILE, COOK THE MACARONI ACCORDING TO PACKAGE DIRECTIONS, UNTIL JUST TENDER. DRAIN.
3. MIX THE PASTA WITH THE ONION, TUNA, TOMATOES, MIXED VEGGIES, COTTAGE CHEESE AND YOGURT. POUR INTO A GREASED CASSEROLE OR EVENPROOF DISH. TOP WITH BREAD CRUMBS.
4. BAKE IN PRE-HEATED OVEN 180c (350f) FOR 30 MINS UNTIL GOLDEN ON TOP. SERVE WITH MIXED SALAD OR BREAD.
