KAKANIN BUTSI RECIPE:
    • 200 grams / 7 oz green mung beans/munggo
    • 3 cups water
    • 1/3 cup sugar
    • 2 cups glutinous rice flour
    • 1/4 cup sugar

ESPASOL RECIPE:
  • Toast the glutinous rice flour until light brown in color. Set aside. 
  • In a separate pan, toast the sweetened coconut flakes. Set aside.
  • In a wok, combine coconut milk and sugar. Bring to a boil. Continue stirring in medium heat for 5 minutes.

NO BAKE CREMA DE FRUTA:
  • 1/2 cup all purpose flour
  • 3/4 cup sugar
  • 1 can evaporated milk 
  • 1 cup water
  • 6 egg yolks, beaten
  • 2 tbsp melted butter

Reduce the bitterness?

  • Blanch it in boiling water for 2 to 3 minutes.
  • Core the melon, dust it generously with salt and let it rest for 10 minutes. Rinse the slices and prepare as you wish.
  • Core it, slice, and boil in a pan of lightly salted water. After 1 minute, remove and drop in ice water. 

Easy ways to soften the butter...

  • Put the butter in a ziploc bag and use a rolling pin or meat pounder to flatten the butter. 
  • Grate the butter on to a warmed dish.  You can also slice the butter and microwave it for a few seconds at a time, making sure you don’t keep it in long enough to melt it.
