INGREDIENTS:
  • 1 1/2 lbs chicken cuts
  • 2 medium carrots, chunks
  • 2 medium potatoes. chunks
  • 1 medium red bell pepper, strips
  • 3 cloves garlic
  • 1 medium onion, chopped
  • 1 cup water
  • 1 can (250mg) tomato sauce
  • 3 tbsp liver spread
  • 2 tbsp fish sauce (patis)
  • cooking oil
  • salt to taste

HOW TO COOK CHICKEN CALDERETA:

  • In a pan or wok, saute, potato, carrots and bell pepper. Cook until tender. Set aside.
  • In the same pan or wok, saute garlic and onion. 
  • Add the chicken and cook until tender. Add fish sauce in between.
  • Add the tomato sauce and liver spread. Simmer for 3-5 minutes.
  • Add the sauteed vegetables. Then add the water.
  • Add salt to taste and simmer for 5 minutes or until the sauce gets thick.
