Honey Baked Salmon
1 slice salmon fillet
salt & pepper to taste
1/4 cup butter
1/3 cup honey
5 cloves garlic, crushed
2 tbsp lemon or calamansi juice
chopped parsley for toppings
HOW TO PREPARE:
Pre-heat oven to 375 degrees F.
Line baking dish with aluminum foil big enough to fold over and seal to cove the salmon.
Lay down salmon fillets and sprinkle salt and pepper to taste.
In a small saucepan, melt the butter over low-medium heat.
Add the honey, garlic and lemon, and whisk until the honey has melted through the butter and the mixture is well combined.
Pour the butter/honey mixture over the salmon, and using a pastry brush or spoon, spread evenly over the salmon.
Fold the sides of the foil over the salmon, covering completely and sealing the packet closed.
Place baking dish on the middle rack and bake for 15-18 minutes.
Open the foil, garnish with parsley and broil for 2-3 minute to caramelize the top.
Serve with steamed rice, quinoa or vegetables on the side.
I served mine with stir fried vegetable medley.
