Bringhe/Arroz Valenciana

​​INGREDIENTS:
  • 8 cups glutinous rice or malagkit
  • 10 cups coconut milk
  • 2 tbsp tumeric or dilaw
  • 2 tbsp salt
  • 2 red bellpepper cut into strips
  • 1 cup raisins
  • 1 lb chicken breast
  • 1 cup gizzard
  • 1 cup liver
  • garlic as desired
  • 1 onion chopped
  • Sliced boiled eggs for garnishing.​​
DIRECTIONS:
  • Tenderize the gizzard in boiling water then boil the liver. 
  • Slice both gizzard and liver lengthwise into strips. 
  • Saute garlic and onions.
  • Add the turmeric powder. 
  • Add the chicken breast, gizzard, liver, salt and stir. 
  • Pour in the coconut milk.
  • Stir constantly and let boil for about 10 minutes.
  • Add the glutinous rice. Keep stirring until the rice cooks. 
  • When nearly cooked, add the raisins and bellpepper strips a little at a time. 
  • Garnish with boiled egg slices.
  • Transfer to a container with banana leaves. (optional)
