Carbonara

Spaghetti carbonara is an Italian dish that features pasta in a delicious parmesan-egg sauce. The name sounds complicated, but it's actually quite simple to make. Traditionally made using pecorino romano cheese but I used parmesan cheese instead so that the ingredients will be an easy find especially if you are located in the Philippines.

INGREDIENTS:
  • 1-2 tbsp olive oil
  • 1 small onion, chopped 
  • 1/2 pound bacon, cut into strips
  • 4 cloves garlic, chopped
  • 1/2 of (16 ounce) package spaghetti pasta
  • 3 egg yolks
  • 1 cup heavy cream
  • 1/2 cup - 3/4 cup shredded Parmesan cheese (adjust accordingly)
  • ground pepper to taste

HOW TO PREPARE CARBONARA:
  • Heat olive oil in saucepan over medium heat. 
  • Saute onion and bacon, and cook until bacon is evenly browned. 
  • Stir in garlic when bacon is about half done. Remove from heat. 
  • Separate the sauteed bacon from the oil. Set aside.
  • Boil a large pot of water with about 1 tsp salt and 1 tsp cooking oil. Cook pasta for 8-11 minutes or until al dente. (Make sure to also follow the pasta package instructions).
  • Drain pasta and set  aside.
  • In a large skillet, pour heavy cream.
  • ​Whisk the egg yolks into the sauce.
  • Whisk in the parmesan cheese.
  • Bring to a simmer.
  • Add the cooked spaghetti and sauteed bacon.
  • Toss well to combine. Season with ground pepper. 
  • Garnish with more Parmesan cheese if desired and serve immediately.
