Kalabasa Bread

INGREDIENTS:
  • 3 cups All-purpose flour​
  • 2 cups sugar
  • 2 Teaspoons Baking Soda
  • 1 tsp salt
  • 4 eggs, beaten
  • 2 cups kalabasa (squash or pumpkin), pre-cooked and pureed or mashed
  • 2 tsp all-spice
  • 2 tsp cinnamon
  • 2 tsp ground cloved
  • 1/2 cup water
  • 1 cup olive or vegetable oil
  • 1 cup roasted cashew nuts

​PROCEDURE: 
  • Preheat oven at 350 deg F.
  • You will need two 9 x 5 loaf pans. 
  • Spread softened butter on bottom, sides, and corners. Set aside.
  • In bowl sift flour, baking soda, salt and mix with sugar. 
  • In separate bowl, mix eggs, kalabasa, all-spice, cinnamon, ground cloves, water, olive oil and mix thoroughly. 
  • Pour into flour mixture and mix, while mixing add in roasted cashew. Divide and pour into loaf pans.
  • Bake 1 hour. Check doneness by sticking clean barbeque stick or skewer in middle of loaf. If it comes out clean, then it's done.
  • Let cool 10 minutes.
  • Invert pan on plate to remove bread from pan. 
  • With baked side up, cut into 1/4 inch slices. 
  • Serve with hot coffee!
