Lemon Cheesecake bars

​INGREDIENTS:
  • 1  1/2 cups graham crackers, finely crushed
  • 5 tbsp unsalted butter, melted
  • 2 (8 oz) packages cream cheese, room temp
  • 1/2 cup sugar
  • 2 tbsp fresh lemon juice
  • 2 tsp fresh lemon zest
  • 1 tsp vanilla extract
  • ​2 large eggs, room temp

PROCEDURE:  (You can also watch my YouTube video below).
  • Preheat oven to 350 F.
  • Line an 8 inch square or round baking pan with foil greased with cooking spray.
  • In a bowl, combine crushed graham crackers and melted butter.
  • Transfer the mixture to the prepared pan. Press the mixture firmly into an even layer. Set aside.
  • In another bowl, combine cream cheese, sugar, lemon juice, lemon zest vanilla extract and sugar. Beat together until well combined.
  • Add the eggs one at a time and beat between each addition.
  • Pour the cheesecake mixture onto prepared pan with crust. Spread into an even layer.
  • Bake for 25 minutes or until center is set. 
  • Remove from oven and cool completely.
  • Cover and refrigerate for at least 3 hours or overnight.
  • Remove from the fridge and slice to serve.
  • Serve or top with whip cream or powdered sugar, or your favorite fruit.

TIPS:
1. If you're using whole graham crackers, finely crush them in a food processor.
2. You can also place them in a ziploc bag and roll with a rolling pin.
3. In place of graham crackers, you can use ginger snaps, nilla wafers, chocolate wafer cookies, chocolate graham crackers, cinnamon grahams, or any other cookie or cracker that is dry and crumbles easily.
