Tapioca Parmesan Cheese Bites

​INGREDIENTS:
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup olive or canola oil
  • 1 cup tapioca flour 
  • 1/2 tsp salt
  • 1/4 cup grated cheddar cheese 
  • 1/4 cup grated parmesan cheese 
​

HOW TO PREPARE:
  • Preheat oven to 375°F. 
  • Combine egg, milk, oil, tapioca flour, and salt in a big bowl and beat until smooth.  
  • Add cheeses and beat for another minute. 
  • Pour batter into a non-stick or lightly greased mini muffin tin filling each well about 3/4 full.
  • Bake for 13-15 minutes until golden.  
  • Remove from oven and cool for a few minutes before removing from pan.  
  • Best served when warm. Enjoy!
