Banana Muffins

INGREDIENTS:
  • 1 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 stick or 1/2 cup butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 2 large very ripe bananas, mashed
  • 1/2 cup milk

CRUMB TOPPING:
  • 1/3 cup brown sugar
  • 2 tbsp all purpose flour
  • 1/2 tsp cinnamon
  • 1 tbsp butter, melted
***Combine all the ingredients for the crumb topping. Mix until coarse. ​

HOW TO BANANA MUFFINS:
  • Preheat oven to 350 degrees F.
  • Prepare the muffin pan lined up with paper cups.
  • Mix together flour, baking powder and salt. Set aside.
  • Beat butter and granulated sugar in a large bowl until creamy.
  • Add eggs. Beating well after each addition.
  • Add mashed bananas. Again, beating in well.
  • Gradually add flour mixture, a little at a time, alternating each addition with a little milk. Beat until well combined.
  • Spoon mixture into muffin pan and sprinkle crumb topping on top. 
  • Bake for 25-30 minutes or until toothpick inserted comes out clean.
  • Cool on wire rack. 
  • Enjoy your soft and moist Banana Muffins!
