Banana Bundt Cake

INGREDIENTS:
  • 1 1/2 cups ripe bananas, mashed
  • 2 tsp lemon juice
  • 3 cups all purpose flour
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup butter, softened
  • 1 1/2 cups sugar
  • 3 large eggs, room temp
  • 2 tsp vanilla
  • 1 1/2 cups buttermilk

HOW TO PREPARE:
  • Preheat oven to 300°F.
  • Grease and flour the bundt pan.
  • Mix mashed banana with lemon juice; set aside.
  • In a medium bowl, mix flour, baking soda and salt; set aside.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Beat in eggs, one at a time, then stir in 2 tsp vanilla.
  • Beat in the flour mixture alternately with the buttermilk.
  • Stir in banana mixture.
  • Pour batter into prepared pan and bake in preheated oven for one hour or until toothpick inserted in center comes out clean.
  • Remove from oven.
  • Cool the cake on a rack for 30 minutes. Run a knife around the edges to free the cake, invert it on a plate, then turn it right side up. Sprinkle with powdered sugar if desired.
  • Serve and Enjoy!
