​Pandesal or Pan de Sal, is a bread roll that is very popular to many Filipinos. Soft, airy, slightly sweet and a favorite bread in the Philippines. A common breakfast with or without filling or spread and paired with coffee.

​I cannot count how many times I have made this recipe. So, this bread is kitchen tested and I know you will love it. Also, many have tried my Pandesal recipe and you should as well. I suggest to read my article How to Bake Bread with Success specially if you are first time baker or would like to know more about breads.

​Nothing beats the smell of freshly homemade bread right in your own kitchen.

​pandesal recipe

INGREDIENTS:
  • 3 cups all purpose flour or more
  • 1/4 cup lukewarm water
  • 1 pouch or 2 1/4 tsp rapid rise yeast 
  • 1 cup evaporated milk 
  • 1 egg, beaten, room temperature
  • 3 tbsp unsalted butter, softened
  • 4 tbsp sugar
  • 1 tsp salt
  • extra flour for kneading 
  • plain bread crumbs for coating 
Note: 10/23/18
  • 1  1/2 tbsp powdered milk (I used instant non-fat dry milk) - Optional but it adds a great taste to your bread. Just combine it to the flour.​​ ​

​Update: 9/25/18 - Bullet #4 & 6 - procedure when adding flour
How to bake using Manual / Traditional method:
  • Dissolve yeast in warm water (110-115°F). Stir to dissolve and let stand for 10 minutes. Set aside. Click here for procedure & tips for a successful yeast.
  • While waiting for yeast to bubble, place milk, butter, sugar, and salt into a microwave-safe bowl/cup or saucepan. 
  • Microwave for around 1 minute or heat over low heat on the stove. (Mixture should NOT be over 115°F or feels hot to the touch, you’ll need to let it sit a few minutes to cool down.)
  • In a large bowl, combine 2 cups flour, beaten egg and yeast mixture. Stir or mix to combine. 
  • Once the milk mixture has cooled enough, add it to the flour/egg/yeast mixture. 
  • Add another 1 cup of flour then add more if needed. Continue mixing until a dough is formed.
  • Knead the dough on a lightly floured surface  or baking mat for about 10 minutes or until dough is smooth & elastic. (The dough should be soft and still slightly sticky.)​

  • If dough is overly sticky when you do this, you need to add a bit more flour, about 1 tablespoon at a time. 
  • Form the dough into a ball and transfer the dough to a lightly oiled bowl, cover with a damp cloth and let it rise in a warm place for at least an hour.
  • After rising, punch down the dough and transfer onto a lightly floured surface. 
  • Use a dough slicer to divide the dough into 2 equal parts.
  • Roll each part until it forms into a log. Cut each log into equal pieces.
  • Form small dough balls, (watch my pandesal video how I formed it into dough balls), coat with bread crumbs and place on baking sheet or in a well-greased pan. (ugly side down).
  • Cover the tray or pan with a damp cloth or plastic wrap and let it rise for 20 minutes.
  • Preheat oven to 350 degrees F.
  • Bake for 18-20 minutes.
  • Serve immediately.
  • Enjoy!​
​TIPS:
  • Oven temp varies. I suggest to bake it the first time at 325 deg F and see how it goes or use an oven thermometer to make sure.
  • Always check before the set time. Set time for 15 minutes and check if top is golden brown. Do not overbake.

  • Once the milk mixture has cooled enough, add it to the flour/egg/yeast mixture. 
  • Continuing on speed 2, gently add another 1 cup of flour then add 1 tbsp at a time (if needed.) Continue mixing until a dough is formed and clean sides of bowl.
  • Form the dough into a ball and transfer the dough to a lightly oiled bowl, cover with a damp cloth and let it rise in a warm place for at least an hour.​​​​
