butterscotch bars

These Butterscotch bars are very delicious. They are chewy, gooey and just heavenly. Finger-lickin' good!  One of our guest, Imelda shared her recipe here in one of my page and I thought of making it and create a new blog post about it.

After slicing the bars, a quarter is already gone!
To prepare, you will have to combine, melted butter, brown sugar and glucose syrup which is a very thick transparent syrup that makes the butterscotch really chewy.  You can make it from scratch and can find recipes on the internet or can purchase a ready made one. 

Where to get it? Any baking store, SM supermarket baking isle, or Amazon. Wilton brand is what I used on this recipe. Please find the Amazon link on the right or below of your screen.

Bars are individually placed on mini cupcake liners.
After combining butter, sugar and syrup. Add the vanilla. Then add the eggs, one at a time and continue beating for  about 8-10 minutes or more. The longer you beat, the more chewy it will become. You want the glucose syrup to be mixed thoroughly with the rest of the ingredients. 
​Make sure to rest the mixer in between to avoid overheating. Some hand mixers are not capable of running for a long period of time especially when the mixture is thick. 
​My Kitchen Aid 5 speed ultra power hand mixer has never let me down. I have used countless times and I love it everything about it. 
Now, combine all purpose flour, baking soda and baking powder. Sift then add to the mixture initially prepared then add the cashew nuts. Transfer to a pan lined with greased parchment paper and bake for 30-40 minutes. Let it cool and cut into bars.

butterscotch bars Recipe

​INGREDIENTS:
  • 2 cups + 2 tbsp all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup butter
  • 1-1/2 cups brown sugar
  • 1/2 cup glucose syrup
  • 1 tsp vanilla
  • 2 eggs
  • 3/4 cups cashew nuts

PROCEDURE:
  • Preheat oven to 325 F.
  • Line a 13 x 9 baking pan with parchment paper and grease with butter. 
  • Combine flour, baking powder and baking soda. Set aside.
  • In a large mixing bowl, combine melted butter, brown sugar and glucose syrup. Beat just until combined.
  • Add eggs one a a time mixing until blended.
  • Add vanilla and continue beating for 8-10 minutes or more.  Note: Longer beating makes it more chewy. Just make sure to rest your hand mixer in between to avoid overheating. 
  • Add the sifted flour mixture and cashew nuts. Mix until well combined.
  • Pour into the prepared pan.
  • Bake 30-35 minutes or until top is firm. 
  • Cool and cut into bars. 
  • Enjoy. ​​

A must try recipe! was craving for butterscotch bars, but can't find any near our area ( don't know if it's even available here in Milan) so decided to give this recipe a try. And Voilà! super yummy and chewy (though I tried it without cashew nuts), just right sweetness to it. It just took me less than 1hour for prep and baking. Thanks for this recipe Ate Janette!

Hi. Molasses is a little bitter and I am not sure if it can hold the batter together. The glucose syrup makes this bar really chewy.

I haven't tried substituting it. I am not sure if corn syrup will hold the batter together and will have the same texture.

Hi! Just baked this today. Super yummy. Been craving for butterscotch for the past few weeks and was even attempted to buy online, then I found your recipe. Substituted gluccose with corn syrup and omitted the 2 Tbsp APF, and still turned out great.

I apologize for the late response. I am not familiar with golden syrup but when I googled it, it looks like you can use it for baking. I suggest to review and compare glucose, corn syrup and golden syrup to make sure.
