TIRAMISU TRUFFLES

​Tiramisu is a coffee flavored Italian dessert. The most common cake served in most Italian restaurants. A cake you can make without baking. It is by using ladyfingers which are dry, egg-based, sweet sponge cake biscuits roughly shaped like large fingers, as a base then layered with creamy mascarpone cheese and dusted the top with cocoa powder.

I have made a delicious TIRAMISU cake before and my version was without liquor and cream without raw egg yolks to it. This time,  I thought of making them into truffles. It's like a one-bite cake. So simple yet elegant to share and serve!

Ahhhh.. this dessert is so simple and easy to make! Just crush the lady fingers then mix with it with the cream which is a combination of mascarpone, a very small amount of powdered sugar, coffee and vanilla. Roll them and dust with cocoa powder. ​Place them into cute mini cupcake liners and voila! Look how elegant they are! Easy, simple and delicious! How easy is that?

TIRAMISU TRUFFLES RECIPE

Ingredients:
  • 1 tsp instant coffee
  • 30 ml boiling water
  • 5oz / 140g ladyfingers (about 16 pieces or 1 3/4 cups when crushed) 
  • 8 oz or 1 cup mascarpone cheese
  • 1 tbsp powdered sugar
  • 1 tsp vanilla
  • unsweetened cocoa powder for coating

Procedure:
  • Dissolve coffee in water. Set aside to cool completely.
  • Crush the lady fingers. You can place them inside a zipped top bag and mash with a mallet or a small rolling pin. You can also place it in a blender or food processor and pulse to break into crumbs.
  • In a medium bowl, combine cheese and sugar. Stir until smooth. 
  • Add the dissolved coffee and vanilla. Mix until well incorporated then add crushed lady fingers. Stir well to combine.
  • Place in a freezer for about 30 minutes.
  • Scoop about 1 tablespoon mixture then roll in your hands to make a ball then roll in cocoa powder. Place on mini cupcake liners.
  • Refrigerate for at least 2 hours before serving.

TIPS & NOTES:

  • Ladyfingers can be substituted with Broas or Mamon Tostado.
  • Powdered sugar can be adjusted accordingly.
  • If you will serve this with kids or those you are very sensitive to caffeine, you can omit the coffee or make it decaffeinated.
  • If it will be served to an adult party, you can add liquor into the coffee if you like. 
  • To substitute mascarpone, beat together 8oz/226g softened cream cheese, 2 tbsp softened butter and 1/4 cup whipping cream until smooth and creamy.
  • These truffles need to be stored in the refrigerator placed in airtight container  and serve within 5 days.
  • If you plan to make it ahead, make the truffles then freeze. Thaw then dust with cocoa powder before serving. 
  • Recipe yields about 20-25 truffles.
