Special Puto sponge cake

Puto is a popular muffins in the Philippines. Traditionally made from rice then evolved using rice flour and now many recipes using all-purpose flour. But, this recipe is using cake flour instead. That's why it's called Special Puto. Special because it's a sponge cake but topped with lots of cheddar cheese and salted egg. Without those two on top, the sponge cake will not be complete.
This Special Puto Cake is so white and spongy. A great recipe to make if you have leftover egg whites. I've made this recipe before but in a cupcake form which I called Special Puto Cucpakes. Super delicious that's why it is my favorite puto recipe.

By the way, this Puto cake is a No-Bake recipe! Whaaat? Yes, and it's great news for those who doesn't own an oven. I know some of my followers from the Philippines doesn't have one. The steamer works perfect for this recipe. So easy! Oh,  and the cheese on top and salted egg are the bomb!  I suggest not to omit the salted egg. It's just really a great combination with this cake but if you are not a fan go ahead and just load the top with grated cheese. ​

​Making this is very simple but of course sponge cake always require a meringue. So, just beat the egg whites, cream of tartar ( you can sub with lemon juice or white vinegar if not available) and sugar. Set aside. Sift together the dry ingredients then add water. Stir until smooth then fold-in the meringue. Transfer to a round pan with parchment, top with cheese and salted egg. Steam for 18-20 minutes. Special Puto Sponge Cake Recipe

Ingredients:
  • 4 egg whites
  • 1/4 cup + 1/2 cup sugar 
  • 1/2 tsp cream of tartar
  • 1 1/2 cups cake flour (see substitute below)
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup water
  • grated cheddar cheese and salted egg for topping
Cake Flour Substitute:
  • Measure out 1 cup all-purpose flour.  
  • Remove 2 tbsp of all-purpose flour and place it back in your flour canister.  
  • Replace the removed all-purpose flour with 2 tbsp cornstarch.
  • Sift flour 5 times.
​*Sifting the flour and cornstarch together will help thoroughly combine the mixture and help to lighten and aerate the flour.

Procedure:
  • Beat the egg whites until frothy.
  • Add cream of tartar and beat until it foams up.
  • Gradually add sugar (1/4 cup) and beat until stiff. Set aside.
  • In a separate bowl, sift together flour, sugar (1/2 cup), baking powder and salt. 
  • Add water and stir until smooth.
  • Carefully fold-in the egg white mixture (meringue) to the flour mixture. ( "Folding" is a more gentle mixing technique than "stirring" and "mixing". Carefully cut through the mixture with the edge of a rubber spatula, working in a gentle figure of eight.)
  • Transfer the batter to an 8" pan lined with ungreased parchment paper. 
  • Add grated cheese and salted egg on top.
  • Prepare the steamer by boiling the water. Place the cake pan on the steamer pan. Wrap the steamer lid with clean cloth to avoid water drips
  • Steam over medium heat for 18-20 minutes. Do not over-steam. Cake is ready when toothpick inserted comes out clean.
  • Slice, serve and enjoy.
