special puto cupcakes topped with cheese & salted egg

​This Filipino muffins (Puto) is one of the many Filipino snacks or meryenda and always a favorite by many. Traditionally prepared like my Puto Cheese Recipe using glutinous rice, coconut milk and sugar.
For a change, I thought of trying a Puto Recipe shared by a friend Ms. Annalisa. Her recipe is made from cake flour, water, sugar and egg whites. I cut the recipe in half and adjusted the egg whites and added salted eggs combined with cheese as a topper. 
It is so white, light and fluffy! It is similar to what I used to eat when I was in the Philippines and it is very delicious!

Preparation is very simple. Just sift the flour, then add baking powder, sugar and water. Stir until smooth. Then, beat the egg whites, cream of tartar and sugar. Beat until stiff then fold into the flour mixture.
​Steaming the muffins doesn't really take much time. It is done in about 10-12 minutes. Just make sure to cover the lid with a cloth to avoid water drip. Do not over steam or else the cake will become firm and dry. You wanted to achieve a soft and fluffy puto muffins.

I know you have a question about cake flour. If you don't have any, and don't want to buy any, this simple substitute will do just fine.

​Measure out 1 cup of all-purpose flour. Remove 2 tablespoons of all-purpose flour and place it back in your flour canister. Replace the removed all-purpose flour with 2 tablespoons of cornstarch. Sift flour 5 times.

If you are not a fan of salted egg, I suggest to use a shredded cheddar cheese or cream cheese.

PUTO cupcakes RECIPE

​INGREDIENTS:
  • 4 egg whites
  • 1/4 cup sugar + 1/2 cup
  • 1/2 tsp cream of tartar
  • 1 1/2 cups cake flour, sifted
  • 1 1/2 tsp baking powder
  • 3/4  cup water
  • cheese for topping and or salted egg for topping

​Cake flour substitute: 
  • ​Measure out 1 cup of all-purpose flour. 
  • Remove 2 tablespoons of all-purpose flour and place it back in your flour canister.
  • Replace the removed all-purpose flour with 2 tablespoons of cornstarch.
  • Sift 5 times.

​PROCEDURE:  
  • Beat the egg whites and cream of tartar. Beat until it foams up.
  • Gradually add sugar (1/4 cup) and beat until stiff. 
  • In a separate bowl, combine flour, sugar (1/2 cup), baking powder and water. 
  • Carefully fold-in the egg white mixture to the flour mixture. ( "Folding" is a more gentle mixing technique than "stirring" and "mixing". Carefully cut through the mixture with the edge of a rubber spatula, working in a gentle figure of eight and moving the bowl as you go.)
  • Transfer the batter to muffin pans or molds lined with cupcake liner and fill up to 2/3 full. 
  • Add cheese and/or salted egg on top.
  • Place a cheesecloth in the steamer lid to avoid water drips. 
  • Steam for 10-12 minutes. Do not over steam. 
  • Muffin is ready when toothpick inserted comes out clean.
  • Serve and enjoy.
*Recipe yields 20 cupcakes
