UBE CASSAVA FLAN

If you have tried my Cassava Flan before, then you will definitely have to try this one as well. This was made special and more flavorful because of the added ube halaya and ube flavor in the mixture. I love ube, and for me this tastes even better. 

When you say Flan, you think that is it sweet. This recipe is not. It has just the right amount of sweetness as I just added 1/2 cup condensed milk for all three molds I made. Feel free to add 1/4 cup more if you prefer it sweeter.

What are the STEPS to make?
It's an easy 1, 2, 3. 
1. Caramelize sugar
2. Combine all ingredients
3. Grease the sides of mold
4. Transfer the cassava batter
5. Steam
6. Invert and unmold from llanera
How simple is that making a delicious no-bake treat at home?

The good thing about this recipe is... it's no-bake. Perfect for those who doesn't own an oven. But if you would like to bake it using bain-marie method also called water bath, you can do that as well. I've tried it but I like the steamed one better. The texture for me is softer and more moist. I didn't really know what was the cause but that was the result.  So, I highly suggest to steam instead. Just make sure to cover the lid of the steamer with cloth. That is to avoid water dripping to your flan.

For the ube, you can use the store-bought Ube Jam or make your own. You can try my Ube Halaya Recipe if you like. 
These are best eaten on the same day.  Any leftover can be placed over the counter top for up to 2 days. If you place them in the fridge, they will harden a bit but you can steam it again if you like or microwave to warm it up. This recipe yields only three molds. I know for sure they will be gone in minutes after making it. So really, nothing to store :)

UBE CASSAVA FLAN RECIPE

Ingredients:
  • 2 cups cassava, grated ( I used frozen ready-made cassava in a pack but fresh can be used by grating and squeezing some juice) 
  • 1/3 cup ube halaya/jam
  • 1 cup coconut milk 
  • 1/2 cup condensed milk
  • 1 large egg
  • 1 tsp ube flavor
  • 7-1/2 tbsp sugar (2-1/2 tbsp for each llanera mold) 
  • butter for coating

Procedure:
  • Spoon 2 1/2 tbsp sugar in a flan mold or lyanera. (Prepare 3 molds). Caramelize over low heat until sugar turns to light golden brown. Using a thong, swirl the caramel evenly on the flat side of the mold. Remove from heat and cool completely.. (​If llanera is not available, you can use these oval pan or oval ramekins). 
  • In a large bowl, add cassava, ube halaya or jam, coconut milk, condensed milk, egg and ube flavor. Stir until well combined. 
  • Brush the sides of the mold with butter then pour the mixture. Divide evenly into three molds.
  • Heat water on a steamer over medium heat. Steam for 45 minutes to 1 hour or until set. Use a toothpick to test if it comes out clean.  (Make sure to cover the lid with a cloth to avoid water drip.) Remove from heat and cool completely.
  • To unmold, run a knife around the cassava flan. Place a plate on top of the mold and invert. Tap the bottom of the mold a few times to release the flan. Remove the mold. 
  • The top will have some dark caramel. You can smooth by scraping with a knife or spatula but that's optional. 
  • Slice and serve. Enjoy! ​​
