Vanilla Cupcakes with Whipped Cream Cheese Frosting

Looking for a light and fluffy Vanilla Cupcakes? Then your hunt is over! These cupcakes are very delicious and super easy to make. They can be topped with a delicious frosting made from whipped cream cheese that's lightly sweetened like I used on this recipe.  If cream cheese is not available, you can also use my Italian Buttercream Frosting. 
If frosting is not your thing, top it with grated cheese or spread some nutella. But they can also be served as it is if desired. Just the cupcake itself is already good. Just the way you like it. What a treat!

​This whipped cream cheese frosting is super light and made with just the right amount of sweetness. One of the best frosting you'll make. It may not be the cheapest but worth the try. These are a great birthday cupcakes you can make for your loved one and definitely the whole crowd will enjoy. They will eat the frosting for sure and not toss it because it's too sweet. Trust me! This recipe yields 12 cupcakes using 3oz colorful cupcake liners. Double or triple the recipe if you like. Enjoy!

Vanilla Cupcakes with Cream Cheese Frosting Recipe

Ingredients:
​Cupcake Batter: 
  • 1/2 cup unsalted butter, softened at room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla 
  • 1 1/2 cups cake flour*
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk, room temperature
Frosting:
  • 4 oz cream cheese, softened at room temperature
  • 1 cup heavy whipping cream
  • 2-4 tbsp or more powdered sugar, adjust accordingly

Procedure:
  • Preheat oven to 350 degrees F.
  • Prepare the lightly greased muffin pan or line with 3 oz paper cups. 
  • Mix together flour, baking powder, and salt. Set aside.
  • In a separate bowl, beat the butter until smooth. 
  • Add the sugar and beat until light and fluffy (3-5 minutes). 
  • Add the eggs, one at a time, beating well after each addition. 
  • Beat in the vanilla extract. 
  • Add the flour mixture (in three additions) and milk (in two additions), beginning and ending with the flour. Scrape down the sides of the bowl as needed.
  • Fill the muffin cups with the batter.
  • Bake for about 18 -20 minutes or just until set and a toothpick inserted into the center of a cupcake comes out clean.
  • Cool completely on a wire rack. While waiting for the cupcake to cool down,  prepare the frosting ​.

  • In a medium bowl, beat the whipping cream until thick. Set aside. 
  • In a small bowl beat the cream cheese until soft and creamy. Add powdered sugar and beat until smooth. Add to whipped cream. Fold until well combined.
  • Transfer the frosting into a piping bag with a star tip (1M or 2D). Decorate as desired. 
  • Recipe yields 12 cupcakes. Enjoy!

TIPS AND NOTES:

​Cake Flour Substitute: 
  • Measure out 1 cup all-purpose flour.  
  • Remove 2 tbsp of all-purpose flour and place it back in your flour canister.  
  • Replace the removed all-purpose flour with 2 tbsp cornstarch.
  • Sift flour 5 times.
​*Sifting the flour and cornstarch together will help thoroughly combine the mixture and help to lighten and aerate the flour.

  • Do not overbeat the cake batter. Beat until just combined.
  • Always check a few minutes before the stated baking time. Do not overbake or the cupcakes will be dry.
  • Powdered sugar for the frosting can be adjusted according to your sweetness preference. I do not like overly sweet frosting so I only added 2 tbsp. ​​

Nice recipe. I would like to try. What brand can you recommend or what brand of heavy whip cream did you use? I have tried Arla for my cakes but it doesn't double up and turns into butter so quickly. Help pls :) Than you!

Hi I use Horizon Whipping Cream. If not available, I also use the great value or store brand (Walmart) whipping cream.

Pwede naman. Mataas lang kasi ang salt content ng salted butter kaya hindi advisable na gamitin sa mga cakes and cupcakes.
