LANGKA CHEESECAKE BARS

When I first saw a post for Langka Cheesecake Bars from a food group member in Facebook, I fell in love with it right away and I immediately said I will make this recipe. First, I love the color, the topping is perfect because it's cream cheese and lastly, I love anything with Sweet Jackfruit. I found this idea from Shean's Kitchen in YouTube. But I modified it, cut back on sugar and omit the white chocolate she added on the cake batter.  I also added some langka essense on the topping to give the top some yellow swirls on it. This dessert does not only look sumptuous but really they taste so good.

Jackfruit or Langka Cheesecake Bars I would say is unique because of its flavor. Not a typical cheesecake with crust but more on having a soft and moist langka flavor cake base topped with langka cheesecake. They not only look amazing and appetizing but boy,  they really are sumptuous! It's one of the desserts I've created that I will make again and again and something that I will bring to potlucks and say, "Hey I made these! They are not overly sweet. Try it"! A lot of times desserts look sweet but this one doesn't. Like I said, I cut back on sugar big time so if you make this, sure thing, they will be gone in minutes!

LANGKA CHEESECAKE BARS RECIPE

Ingredients:
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp + 1/4 tsp langka flavor essence, divided
  • 1/3 cup + 1/3 cup langka (jackfruit) in syrup, divided, sliced into small strips
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 8 oz cream cheese, softened at room temperature
  • 3 tbsp granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Procedure:
  • Preheat oven to 350F. Line an 8 x 8 baking pan with parchment paper and grease. Set aside. 
  • In a large bowl, combine butter and sugar. Beat until well combined. Add eggs one at a time, beating well after each addition. Stir-in 1 tsp langka flavor essence.
  • Place a sieve over the mixing bowl and add flour, baking powder and salt. Sift then stir using a spatula just until combined. Do not overmix. Stir-in 1/3 cup langka (jackfruit).
  • Pour the cake batter onto the prepared pan. Set aside.
  • In a medium bowl, beat cream cheese until creamy.  Add sugar and beat well. Add egg and vanilla extract. Beat until mixture is smooth. Pour cream cheese mixture over the cake batter. 
  • In a small bowl. combine 1/3 cup langka (jackfruit) and 1/4 tsp langka flavor. Spoon over the cheesecake and run a knife to swirl the top. 
  • Bake for about 30 minutes or until the top is nearly set. Cool completely before serving.

​TIPS and NOTES:

  • A 6x6 square pan can also be used if you want a taller cheesecake bar. 
  • Fresh jackfruit can be used. In a medium pan, add 1 cup langka, 1/2 cup water and 1/4 cup sugar. Cook until langka is soft and sugar has caramelized. 
  • If Langka Flavor is not available, it can be omitted. You can add a small amount of food color if desired to achieve the yellow cake. But I suggest to add as it provides great flavor and color to this dessert.
  • Step or bullet#6 can be skipped. You can directly add the langka as a topping. I added langka flavor because it gives  the topping a light swirling color effect as well. 
  • Make sure to check your oven before the set time. Oven temperature varies. This dessert is done as soon as cheesecake topping has just set. Do not overbake or the cake will be dry. 
  • Store the cheesecake bars in an air tight container. They can last for up to 5 days chilled in the fridge.
