Chocolate Coconut Bars

These Chocolate Coconut Bars are layers of buttery crust, chocolate and coconut.  A recipe I found at the back of the C & H dark brown sugar packaging. Thanks C & H for these chocolate bars packed with coconut.  Super easy to make. A delicious treat that's perfect for the whole family. Crusty at the bottom with thin chocolate layer in the middle and chewy toasty coconut topping.

Chocolate and coconut make for a match made in dessert heaven. They are seriously addictive so you need to watch out. ​Anyone who loves chocolate and coconut must try these!

cHOCOLATE cOCONUT bARS rECIPE

Ingredients:
  • 1/2 cup or 1 stick softened butter or margarine
  • 1/2 cup dark brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 2 large eggs
  • 1 cup dark brown sugar
  • 1 tsp vanilla
  • 2 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups coconut flakes or shredded

Procedure:
  • Preheat oven to 375 F. 
  • In a large bowl, using a pastry cutter or fingertips, combine the first four ingredients. Mix until crumbly. Pat into 13 x 9 baking dish. Bake 10 minutes. Remove from oven and sprinkle chocolate chips over hot crust. Return to oven about 1 minute to soften. Remove from oven and spread chocolate evenly over crust.
  • In medium bowl, beat eggs until pale yellow. 
  • Beat  in sugar and vanilla.
  • Add flour, baking powder and salt. Beat until fully incorporated.
  • Stir in coconut.
  • Spread mixture evenly over chocolate layer.
  • Bake 15-20 minutes. Remove from oven and cool completely in pan.
  • Cut into bars. Serve and enjoy.
