Ube Halaya

​Ube Halaya or Ube Jam is a Filipino dessert made from boiled purple yam root that are mashed or grated and cooked with milk and sugar. It is usually used in many ube flavored recipes like ice cream, pastries, cakes, cookies and more.
​In the Philippines it's easy to find purple yam in the market  but here in California, it's a bit of a challenge so I used a store-bought frozen grated purple yam that I just thawed. Same taste and less of a hassle finding and preparing the yam.

It's a little expensive buying a ready-made Ube Jam so I suggest to make your own if you love making desserts using it. If you think this recipe is a lot, you can halve the recipe if you like. Preparation is super easy. The only challenge is cooking it. It's not hard because everything is in one pot. It's the stirring that will require a bit of an arm work which required constant stirring until the mixture becomes really really thick. So, on medium-low heat, it took me about 45 minutes until I achieved the right consistency. This jam is a great dessert that you eat by itself but let me give you a list of recipes where you can use this Ube Halaya.

Ube Halaya Recipe

​Ingredients:
  • 1-kilo purple yam root (ube), about 4 cups, boiled and mashed or grated
  • 1/3 cup unsalted butter
  • 1- 1/2 cans, 14oz each condensed milk, adjust accordingly
  • 2 cans, 12oz each evaporated milk
  • 2 tsp vanilla extract
  • 1 tbsp + 1/2 tsp ube flavor, adjust accordingly
  • margarine or butter for greasing containers

Procedure:
  • In a large bowl, combine grated purple yam root, condensed milk and evaporated milk. Beat or use a blender to fully incorporate. Set aside.
  • In a heated wok or large pan, melt butter or medium-low heat.
  • Add ube mixture, ube flavor and vanilla. 
  • Stir continuously until mixture becomes thick. 
  • Transfers to containers greased with margarine or butter. Cool completely.
  • Serve and enjoy!

TIPS AND NOTES:
  • Recipe yields four 8 ounces jars and one 7 x 4 x 2 container or 3 Lyanera/Llyanera moulds.
  • 1 kilo purple yam can be substituted with 2 (16oz) packs of store-bought ready to use grated ube. 
  • If you have a food processor or blender, use it instead of grating the yam.
  • You can omit or add 1/2 can more condensed milk. It will depend on your sweetness preference.
  • You can also toss all ingredients, except butter in blender and transfer to the pan with heated butter.
  • When serving, you can top your Ube Halaya with Latik or Grated Cheese. 
  • Ube Jam or Ube halaya can be used as a filling for bread recipes, cakes, cookies and more. I have a list of recommended recipes.
