​What is Mamon? In the Philippines, we call a chiffon or sponge cake "Mamon".  Since, Ube is one of the favorite flavor during holidays, Ube Mamon was created to make ube-flavored Filipino chiffon cake.

​This Ube Mamon recipe is super moist, fluffy and delightfully flavorful because not only ube extract is added but ube jam as well. Super light and loaded with ube flavor. A perfect snack the whole family will enjoy.

It seemed hard to make but it is very actually easy. I made a simple process for you to follow and it is by separating wet and dry ingredients and the meringue. I have the ingredients list divided for you so you can place them in three groups.
First, beat the egg whites to make a meringue. Second, combine dry ingredients and pour over the wet ingredients. Third, fold the meringue into the mixture until light and fluffy.

ube mamon recipe

Ingredients:
Dry: 
  • ​1 cup cake flour
  • 1/2 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
Wet:
  • 4 egg yolks
  • 1/4 cup vegetable oil
  • 1/4 cup fresh milk 
  • 1 tbsp ube extract
  • 1/4 cup ube jam
 Meringue:
  • 4 egg whites, rooom temperature
  • 1/4 tsp cream of tartar
  • 1/4 cup sugar
  Optional: 
  • grated cheese for topping


​Cake Flour Substitute: 
  • ​Measure out 1 cup of all-purpose flour. Remove 2 tablespoons of all-purpose flour and replace with 2 tablespoons of cornstarch. Sift flour 5 times.

Procedure:
  • Preheat oven to 350 degrees F.
  • Light grease the individual tart tin molds or line with muffin liner. Non-stick baking paper tart mold can also be used.
  • In a bowl, whisk egg whites until frothy. 
  • Add cream of tartar. 
  • Gradually add 1/4 cup of sugar while beating in high speed until still stiff. Set aside.  
  • In another bowl, combine all the liquid ingredients (egg yolks, oil, milk, ube flavor and grated ube). Set aside.
  • In a mixing bowl, sift flour, sugar, baking powder, and salt.

  • ​Pour-in the liquid ingredients to the flour mixture. Continue mixing until light & fluffy.
  • Using a spatula, gently fold in the egg whites mixture into the batter mixture.
  • Pour the batter evenly into the prepared molds.
  • Bake for 15-20 minutes. Do not over bake. (Oven temperature varies, please check before the set time). 
  • Cake is ready if toothpick inserted comes out clean.​ 
  • Note: A slight deflation is normal once the cake cools down. 
  • Top with grated cheese (if desired).

Could I omit the Ube jam?

I suggest to use my regular mamon recipe https://www.pinoycookingrecipes.com/recipe/mamon-filipino-sponge-cake and just add ube flavor.
