Ube Bar

These Ube Bars are one of the many breads being sold at bakeries in the Philippines. They are made of baked breads dipped in sweet purple yam syrup coated with dessicated coconut. It wasn't really my favorite because I find those commercial ones a bit hard or grainy. I am not sure if it is because they use old bread or over-baked bread so I thought of making this soft version.

Ube Bar REcipe

Ingredients:
  • 4 cups bread flour
  • 1 packet or 2 1/4 tsp instant yeast
  • 1/2 cup sugar
  • 3/4 cup evaporated milk
  • 2/3 cup lukewarm water
  • 1 tbsp ube extract
  • 1/4 cup melted butter
Syrup
  • 1/2 cup evaporated milk
  • 1/2 cup sugar
  • 1/2 tbsp ube extract
  • dessicated coconut for coating

Procedure:
  • Preheat oven to 350 F.
  • Grease a 13 x 9 pan with oil or butter. 
  • In a mixing bowl, combine flour, yeast and sugar. Stir until combined.
  • Add milk, lukewarm water,  melted butter and ube extract.
  • Stir until ingredients are fully incorporated then knead until a smooth dough is formed. Knead by hand or or use a stand  or hand mixer with a dough hook about 5 minutes. 
  • Transfer the dough onto the prepared pan. 
  • Stretch or spread evenly using your hand or a rolling pin.
  • Trim all the sides of the dough and score, forming rectangular bars. 
  • Bake for 25-30 minutes or until done. Let cool.
  • In a small sauce pan, combine milk, sugar and ube extract. Stir and simmer until thicken, set aside and let it cool.
  • Cut the bars and dip into the syrup. Rest the bars  on a rack with pan at the bottom to drain excess syrup. 
  • Roll in dessicated coconut. 
  • Enjoy.​
