Easy Blueberry Muffins

These Blueberry Muffins are soft, moist and bursting with blueberry flavors. Not only fresh blueberries were added but also topped with berry mixture. I said fresh because based on my experience, using frozen blueberries does not really give an appetizing blueberry muffins. What do I mean? I notice that the frozen ones end up releasing this blue-purple color to the muffins and I just don't find it appealing. It stains the cake batter and everything is just blue. So use fresh ones if you can find them. 
Also, you are probably wondering what's berry mixture? It's actually a combination of blueberries and sugar cooked until blueberries are soft and sauce has thickened a  bit. Similar to blueberry jam but on a lighter side.

Blueberry Muffins Recipe

Ingredients:
  • 2 cups all-purpose flour 
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 cup + 1/2 cup fresh blueberries
  • 2 large eggs, room temperature
  • 1 cup sour cream or plain yogurt
  • 1 cup + 1 tbsp granulated sugar
  • 6 tbsp butter, melted
  • 1-2 tbsp sugar​ ​ for topping  (optional)

Procedure:
  • Preheat oven to 350 degrees F.
  • Line a 12 cavity standard muffin or cupcake pan with paper liners.
  • In a sauce pan, combine 1 cup blueberries and 1 tbsp sugar. Cook over medium heat until berries start to soften. Mash with with a spoon and cook until berries slightly thickens. Remove from heat and let it cool.
  • In a medium bowl, lightly beat eggs. Add sour cream and melted butter. Mix well until smooth and set aside. 
  • In a large bowl, combine flour, 1 cup sugar, baking powder and baking soda. Mix well. 
  • Add egg mixture. Mix until just moistened. 
  • Stir in 1/2 cup blueberries. Add another 1/4 cup if desired.
  • Divide evenly between muffin cups. 
  • Top with berry mixture. Use a toothpick to swirl together.
  • Sprinkle tops with 1-2 tbsp sugar (optional)
  • Bake  for 30 minutes of until toothpick inserted in center comes out clean. Make sure to check before the set time as oven temperature varies.
  • Cool in pan 5 minutes; transfer to wire rack.
  • Enjoy warm or cooled.
  • Leftovers can be stored in the fridge and warmed in the microwave for 20 seconds.
