chocolate Banana Muffins

Do you love chocolate cupcakes? Wait a minute... who doesn't? I do especially when they are soft and moist. Well, if you do and if you have leftover ripe bananas in your kitchen counter, mash it and add it to your chocolate cupcakes. You will be amazed how soft and moist your muffins are. Here's a recipe that's no doubt a keeper.

These Chocolate Banana Muffins are soft, very moist and loaded with chocolate flavor. Super easy and delicious! A definite must-try.

Chocolate Banana muffinS recipe

Ingredients:
  • 3/4 cup dark brown sugar
  • 6 tbsp unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 large ripe bananas about 1 cup when mashed
  • 1 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup semi-sweet chocolate chips plus more for topping

Procedure: 
  • Preheat oven to 425 F.
  • In a large bowl, whisk together sugar, butter, egg and vanilla.
  • Add mashed banana and whisk to combine. 
  • Place a strainer over the bowl and sift together flour, cocoa powder, baking powder, baking soda and salt. Use a spatula to mix and stir until just combined. Do not overmix.
  • Stir-in chocolate chips.
  • Line a standard 12 cup non-stick muffin pan with paper liners. Scoop and divide batter equally into 12 cups.
  • Top with more chocolate chips, about 5-8 pieces depending on your preference.
  • Bake for 5 minutes at 425 F then lower heat to 350 F and bake an additional 12-15 minutes, or until a toothpick comes out  almost clean. 
  • Remove from oven and cool for about 10 minutes before removing from muffin tin. Cool completely on wire rack.
  • ​Serve and enjoy.
