Chocolate Cupcakes with Cream Cheese Frosting ​

INGREDIENTS:
  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup Hershey's Cocoa, unsweetened
  • 1-1/2 tsp baking powder
  • 1-1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

CREAM CHEESE FROSTING:
  • 1 (8 oz) cream cheese, room temperature
  • 2 tubs (8 oz) frozen cool whip 
  • 3 tbsp powdered / confectioners sugar, sifted
  • 1 tsp vanilla

HOW TO PREPARE THE CUPCAKES:
  • Preheat oven to 350 degrees F.
  • Grease 24 count muffin pans or line with paper cups.
  • Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. 
  • Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. 
  • Stir in boiling water (batter will be thin). 
  • Pour batter into prepared muffin pan.
  • Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. 
  • Cool 5 minutes; remove from pans to wire racks. Cool completely.
  • Decorate your yummy cupcakes! ​
***Yields about 30 cupcakes.

HOW TO PREPARE THE FROSTING:
  • Whip softened cream cheese.
  • Add in cool whip until nice and smooth. 
  • Add the powdered sugar. 
  • Beat until light and fluffy.
  • Add the vanilla.
  • Beat until right consistency. 
  • To tint the frosting a color, add a couple drops of food coloring to the mixing bowl and beat until the frosting is completely dyed and no white is showing. 
  • Decorate your cupcakes!  ​
*** Found this recipe at the back label of Hershey's cocoa. They are very soft and spongy. The best! ​
