EAsy banana muffins 
If you are looking for a moist Banana muffins, then you are on the right page. Many Banana bread recipes out there tend to be hard and dry. This one is moist and soft even for the next couple of days. Simple, easy to make and delicious! 

​First tip for a delicious Banana Muffin is make sure the bananas are overripe. As in the skin is full of dark spots and very easy to mash. Second, do not over mix the batter. That makes the muffin dry. 

​Third, do not over bake. When my recipe calls to bake for 25 minutes. Please check yours at least 5 minutes before the set time. Oven temperature varies. INGREDIENTS:
  • 1 ½ cup all purpose flour
  • ½ tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 4 very ripe bananas , about 2 cups when mashed
  • 1/2 cup sugar
  • 1 egg
  • ½ cup vegetable oil
  • 1 tsp vanilla
  • 1/8 cup evaporated milk

HOW TO PREPARE: 
  • Preheat oven to 350ºF. 
  • Mix together flour, salt, baking powder and baking soda. Set aside. 
  • In mixing bowl, combine together bananas, sugar, egg, oil and vanilla.
  • Add flour mixture and mix at low speed just until combined. Do not  over mix. 
  • Add  the milk, mix just until blended. Do not over mix. 
  • Place baking cups into muffin pan.
  • Divide the batter equally into muffin pan. Recipe yields 18 muffins.
  • Bake for 22-25 minutes or until toothpick comes out clean when inserted in center of muffin.
  • Serve and enjoy!
