Orange Muffins Recipe

​INGREDIENTS:
  • 1  3/4 cups all-purpose flour
  • 2/3 cup sugar 
  • 1 tbsp baking powder 
  • 1/2 tsp salt 
  • 1/2 cup vegetable oil 
  • 1 cup sour cream
  • 1 large egg 
  • 1/4 cup orange juice (I used freshly squeezed with pulp)
  • 1- 2 tbsp orange zest
Orange Glaze Ingredients:
  • 3/4 cup powdered sugar 
  • 1/8 cup or 2 tbsp orange juice ( I used freshly squeezed without pulp)

​HOW TO PREPARE:
  • Preheat oven to 375 degrees F.
  • Line cupcake pan with baking cups. 
  • In a mixing bowl, whisk together flour, sugar, baking powder and salt. Set aside.
  • In a separate small bowl or large measuring cup, mix together oil, sour cream, egg, orange juice and zest.
  • Add this to the dry ingredients and mix together till just combined. Do not over-mix. Batter will be thick and spongy. ( I just used a wire whisk).
  • Divide the batter equally between the 12 cupcake liners and gently tap the pan on the counter-top to settle the batter.​

These muffins are very moist and smell so gooood!

I can't resist the smell and so I ended up eating three muffins right away!

  • Bake for 20-25 minutes or until toothpick inserted on center comes out clean and muffin tops are golden brown.
  • While orange muffins are baking, prepare the Orange Glaze.
  • In a small bowl, whisk the glaze ingredients till sugar is completely dissolved and you get a thick, but pouring consistency. 
  • When muffins are done, remove from oven and cool in pan for 5 minutes. Transfer muffins to a wire rack.
  • While muffins are still  a bit warm, pour the orange glaze over them.
  • Allow glaze to set fully before serving.
  • Enjoy! ​​
