vanilla cupcakes

These Vanilla cupcakes are way better than the vanilla cake mix in a box. It is soft, spongy and delicious! I normally bake Chocolate Cupcakes but this time, a family friend's beautiful daughter turned 18 last February 16th and wanted a 2 tier naked cake and vanilla cupcakes.

For my 2 tier naked cake I used my Mamon Recipe, frosted it using Italian Buttercream and decorated it with fresh flowers. Please see photo below.

For my cupcakes, I also used Italian Buttercream frosting and decorated it using my Russian Piping Tips that I got online (Amazon links on the right below). They are easy to use and creates beautiful little flowers in one drop. I suggest to purchase a set because it comes with piping bags and leaf nozzles as well. 

These russian tips saved me a lot of time when decorating and I get a lot of compliments on my creations.

This recipe is not a typical vanilla cupcakes using all purpose flour. I used cake flour in order to achieve the soft and spongy texture. Please scroll down for full recipe.

​vanilla cupcakes recipe

​​Ingredients by Pinoy Cooking Recipes
  • 1/2 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla 
  • 1 1/2 cups cake flour, sifted
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk, room temperature

Procedure by Pinoy Cooking Recipes
  • Preheat oven to 350 degrees F.
  • Prepare the lightly greased muffin pan or lined with paper cups. 
  • Mix together flour, baking powder and salt. Set aside.
  • In a separate bowl, beat the butter until smooth. 
  • Add the sugar and beat until light and fluffy (3-5 minutes). 
  • Add the eggs, one at a time, beating well after each addition. 
  • Beat in the vanilla extract. 
  • Add the flour mixture (in three additions) and milk (in two additions), beginning and ending with the flour. Scrape down the sides of the bowl as needed.
  • Fill the muffin cups with the batter.
  • Bake for about 18 -20 minutes or just until set and a toothpick inserted into the center of a cupcake comes out clean.
  • (Always check a few minutes before the stated baking time. Do not overbake or the cupcakes will be dry.)
  • Cool on wire rack. Enjoy your cupcakes.

Hi Ms. Janette. I'd like to thank yoy for sharing your cupcake recipe. I tried it this morning and my family loved it! It was light and fluffy just the way I liked. I dont have whole milk so I just substituted it with 1/4 evaporated milk+ 1/4 water. Then I topped the 1st batch with cheese and the other half with nutella and sprinkles. What a treat! Thanks again ☺️

I am glad that you tried it. Thanks for leaving a comment here and for providing us information what you substituted. That's a great decision on substuting with evap and adding water because evap milk has half less water content than fresh milk. Happy to know that you all loved it. 😊

Hi. For some reason, I didn't get notified about your inquiry and apologize for that. Yes it can be baked using a larger pan. Baking time will be longer about 25-30 minutes.
