Ube Kalamay

Ube Kalamay is a type of Filipino rice cake. It is made from glutinous rice flour, coconut milk, sugar and purple yam. Loaded with purple yam and coconut flavor and not overly sweet. I don't like kakanin that are too sweet so I only added 3/4 cup sugar on this recipe but you have the option to adjust according to your sweetness preference. 
I made Kalamay Ube before and cooked in a pot instead so a lot of stirring is required. For this recipe, I made it easier by steaming it. Less arm work and same great taste!

The process is simple. Make the latik first. Cook the coconut milk or coconut cream until it turns into solid and oil separates and until color turns golden. The oil from latik can be used for greasing the pan and for brushing the top of the kalamay when it's ready. Next step is very simple. Just combine the rest of the ingredients and steam for 45 minutes. Easy peasy :)

Ingredients:
  • 2 1/4 cups glutinous rice flour
  • 3/4 cup or 1 cup granulated sugar if you prefer it sweet. 
  • 2 cupscoconut milk
  • 1 cup purple yam, boiled and mashed
  • 1 tbsp ube extract
  • 1 can, 15 or 19 oz coconut cream for Latik

Procedure:
  • Prepare the latik by heating coconut milk or cream in a pan. Bring to a boil.  Lightly stir if bottom or sides of pan starts to brown. Milk will turn into solid and oil will separate. Cook until golden brown. Set aside.
  • Prepare a pan greased with oil from latik or line with banana leaves (heated to make pliable). Set aside.
  • In a large mixing bowl, combine flour and sugar. 
  • Add coconut milk. Mix until fully incorporated. 
  • Add purple yam and ube extract. Stir until combined. 
  • Transfer to the prepared pan. (I used an 8" pan)
  • Steam over medium heat for 45 minutes. Notes: Make sure the water is already boiling. Cover the lid with cloth to avoid water drips.
  • Remove from steamer. 
  • Top with latik.
  • Enjoy.

Yes or you can just grease the pan if banana leaf is not available.

Hi. Just boil or steam the yam until tende, peel the skin then mash with a fork.
