Kakanin Lansong is what we call this delicious snack in Bataan. It's a steamed rice cake topped with curd coconut cream. It is made from glutinous rice, sugar and coconut milk. So delicious and easy to make!

The process is very simple. Prepare the topping first which is the latik. I suggest to prepare it first because cooking latik takes a little longer. It's a simple boiling of milk but you  have to wait until the liquid turns in to solid and cook until colors turns golden.

Making lansong is very simple. Just combine all the ingredients in a bowl and mix until you achieve a very smooth batter. Transfer to a greast pan or banana leaf (which I highly suggest) greased with oil from latik then steam for 30 minutes. That's it. You just top it with latik that you inially prepared and voila! You have a delicious homemade kakanin! :)

Ingredients:
  • 2 cups glutinous rice flour
  • 3/4 cup sugar
  • 1 can, 15 oz or 1 3/4 cups coconut milk
  • 1 can, 15 oz or 19 oz  coconut cream for Latik
  • Banana leaves (optional)

Procedure: 
  • Prepare the latik by heating coconut milk or cream in a pan. Bring to a boil.  Lightly stir if bottom or sides of pan starts to brown. Milk will turn into solid and oil will separate. Cook until golden brown. Set aside.
  • Note: If the brand that you used did not turn into oil, you can add 2 tbsp vegetable oil to the solid residue and cook until light the color turns light brown in color.​ ​​

  • In a large mixing bowl, combine glutinous rice flour and sugar.
  • Add coconut milk. Mix until fully incorporated and batter becomes smooth. 
  • Grease an 8 "or 9" round cake pan with oil from latik. If banana leaf is available, I highly suggest to use one then grease with oil from latik. 
  • Transfer the mixture to a greased pan. 
  • Steam for 30 minutes over medium heat. 
  • Top with prepared latik.
  • Serve warm.

Hi,

What brand of coconut milk did you use for the Kakaning Lansong recipe? The coconut milk I used did not turn to "latik" at all. It was a brand from Thailand.

Hi Ms. Rose. I used MaePloy coconut cream. Do not use coconut milk. If you look at the list of ingrediens and my video, I used coconut cream. It is much thicker and produce lots of latik like you see in the video.
