buchi / sesame balls with Ube filling

Buchi or Sesame balls are deep fried rice cake that are fully covered with crispy sesame seeds. Traditionally filled with sweet red mung beans but I find Ube tastes way better. Also, the sweet mung beans takes forever to cook. Though, you have the option to purchase a ready made one in can which is normally available at an Asian market.  But, using Ube Jam as a filling is a bomb! I promise, you will definitely love this! 
See how full it is to the core unlike other Buchi recipes with hollow or empty part in the middle.

These are fully covered with sesame seeds that are ready for deep frying.
For the ube filling, you can either make it from scratch using my Ube Halaya or Purple Jam recipe. You can also buy a ready made one in a bottle. They taste good as well as long as you get a good brand. If the color is too bland, you can always add ube flavor. 
Sometimes, that's what I do when I get lazy making the Ube Jam. Also, you won't be needing a lot anyway unless you are making a big batch of Buchi for the whole gang. Make sure if adding ube flavor, refrigerate the ube jam first. We want a solid ube filling for the buchi for easing molding. 
​The process is not that hard. Just boil water and sugar together. Remove from heat then add it to the flour.

​There will be no exact measurement on the rice flour here because you will need the right consistency when putting it together. If it's too watery, then add more flour, just 1 tbsp at a time. You should be able to knead it without sticking to your hands. That's the key as long as you don't to put too much flour. Again, adjust the flour as needed.

Also, a combination of water and glutinous rice flour will serve as a gel or coating to make the sesame seeds stick to the rice balls. Deep fry all the coated dough and voila, you have a delicious homemade Buchi with Ube filling.

Ingredients: 
  • 3/4 cup water
  • 1/4 cup sugar
  • 1 1/2 to 1 3/4 cups glutinous rice flour (adjust accordingly)
  • 1/2 tsp vegetable oil (optional)
  • Ube jam for filling 
  • sesame seeds 
  • Vegetable oil for frying
For coating: 
  • 2 1/2 tbsp glutinous rice flour 
  • 3 tbsp water

​Procedure:
  • Prepare 1 cup of glutinous rice flour in a bowl. Set aside. 
  • In a bowl, combine coating ingredients together. Set aside.
  • ​In a small pot, combine water and sugar together. Simmer until sugar is dissolved. Remove from heat then add to the prepared flour. Mix until smooth.
  • Add the remaining flour. Add more if needed depending on consistency. Please the video what it should look like.
  • Knead until a dough is formed. 
  • Add vegetable oil. (This is optional. It just makes the dough easy to manage. Will not be a big deal if you add it or not). Knead until just combined.
  • Form into a log. Divide into 10 equal parts.
  • Flatten each dough with your fingers to make a round shape
  • Place about 1 tsp Ube filling on the center.
  • Gather all the sides and pinch together. Seal well. 
  • Roll using the palm of your hands to make a nice round shape.
  • Dip the rice balls on coating mixture. Make sure all sides are covered.
  • Roll the coated rice balls in sesame seeds. 
  • Heat oil in a deep pan. 
  • Deep fry the sesame balls. Cook until 
  • Remove from oil and drain on paper towels.
  • Serve warm.
  • Enjoy :)

Please help po kasi i've cooked buchi 4 times na pero po napansin ko na kapag malamig na sya ay tumtigas na or ang hirap na po nya nguyain. Bakit po kya ganun ang nagyayari sa buchi ko?

Try mo bawas konti ng flour. It could be the brand that you use or how you measure it. Do you use the standard measuring cups for the dry ingredients? Also when measuring, loosen up at the flour first and do not tap the measuring cup para hindi masiksik.
