Butterscotch Recipe

INGREDIENTS:
  • 2 cups + 2 tbsp all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup butter
  • 1-1/2 cups brown sugar
  • 1/2 cup glucose
  • 1 tsp vanilla
  • 2 eggs
  • 3/4 cups cashew nuts

PROCEDURE:
  • Preheat oven to 325 deg F.
  • Grease and line a 9x13 pan.
  • Sift the dry ingredients (1st three) and set aside.
  • Melt butter over low fire then transfer into the bowl of the mixer.
  • Add the sugar, glucose and vanilla. Beat on medium just until combined.
  • Add eggs one a a time mixing until blended. And continue mixing at medium speed for 20 minutes.
  • At low speed add dry ingredients and the cashew nuts.
  • Pour into the prepared pan.
  • Bake 35-45 minutes or until top is firm.
  • Cool and cut into bars.
