Peach Cake

INGREDIENTS:
  • 1 1/2 tbsp unsalted butter, melted
  • 2 tbsp brown sugar
  • 1 can sliced peaches, drained
  • 6 tbsp unsalted butter, softened 
  • 1/2 cup sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp kosher or iodized salt

HOW TO MAKE PEACH CAKE:
  • Preheat oven to 350 degrees F.
  • Lightly grease an 9 inch glass baking dish or pan.
  • Combine melted butter and brown sugar. Pour over into the the dish.
  • Arrange peach slices on the base of the baking dish. 
  • Sift together the flour, baking powder and salt. Set aside.
  • Beat softened butter and the sugar using electric beater until creamy.
  • Continue beating while adding the eggs gradually. 
  • Add the vanilla extract and sour cream. 
  • Fold in the flour mixture into the butter mixture until well combined. 
  • Transfer the mixture over the peaches and smooth the surface.
  • Bake for 30 minutes or until toothpick or skewer inserted into the center of the cake comes out clean.
  • Remove from the oven. Cool for few minutes.
  • Invert the cake onto a flat plate.
  • Serve warm at room temperature.
