Tuna and Mixed
Veggies Pasta Bake

INGREDIENTS:
  • 1 TBSP. OLIVE OIL
  • 1 ONION CHOPPED
  • 250G. WHOLE MEAL MACARONI OR PENNE
  • 200G TUNA IN CAN, WELL DRAINED and FLAKED
  • 400 G. CAN TOMATOES 
  • 125G. COOKED MIXED FROZEN VEGGIES
  • 125G. COTTAGE CHEESE OR RICOTTA CHEESE
  • 2 TBSP PLAIN YOGURT
  • 75G. WHOLEMEAL CRUMBS OR DRY BREAD CRUMBS

DIRECTIONS:
1. HEAT THE OIL IN THE NON-STICK FRYING PAN, ADD THE ONION AND FRY FOR 5MINS UNTIL SOFT.
2. MEANWHILE, COOK THE MACARONI ACCORDING TO PACKAGE DIRECTIONS, UNTIL JUST TENDER. DRAIN.
3. MIX THE PASTA WITH THE ONION, TUNA, TOMATOES, MIXED VEGGIES, COTTAGE CHEESE AND YOGURT. POUR INTO A GREASED CASSEROLE OR EVENPROOF DISH. TOP WITH BREAD CRUMBS.
4. BAKE IN PRE-HEATED OVEN 180c (350f) FOR 30 MINS UNTIL GOLDEN ON TOP. SERVE WITH MIXED SALAD OR BREAD.
