Banana Nut Bread

​​INGREDIENTS:
  • 2/3 cup whole milk
  • 1 tablespoon fresh lemon juice
  • 2 1/4 cups sifted cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 stick (1/2 cup) unsalted butter, softened
  • 2/3 cup sugar
  • 2 eggs
  • 2 very ripe medium bananas
  • 4 oz chopped walnuts

HOW TO PREPARE BANANA NUT BREAD:
  • Preheat oven to 350°F. 
  • In a bowl, whisk together flour, baking powder, salt and baking soda. Set aside.
  • Mix together milk and lemon juice. Set aside.
  • In a large bowl, beat together butter and sugar with an electric mixer until fluffy.
  • Add eggs one at a time, then add mashed bananas beating until well combined.
  • Add the flour mixture and milk alternately into the banana mixture mixing at low speed until the batter is smooth.
  • Stir in walnuts.
  • Pour into greased loaf pan and bake 45mins - 1 hour or until a wooden pick inserted in center comes out clean.
