INGREDIENTS:
2-3 pieces medium size Tilapia, fried
3/4 cup vinegar
2 cups water
2 tbsp sugar
1 1/2 tsp salt
5 cloves garlic, minced
1 medium onion, sliced
2 thumb size ginger, strips
2 tsp turmeric (yellow powder)
cooking oil
HOW TO COOK ESCABECHE:
Fry fish and set aside.
In a pan or wok, saute ginger, garlic and onion.
Add water, salt and sugar. Stir until sugar is dissolved. Add the vinegar. Do not stir. Bring to a boil.
When boiling, add the fried fish. Simmer for 5 minutes.
Serve with hot rice.
