INGREDIENTS:
  • 2-3 pieces medium size Tilapia, fried
  • 3/4 cup vinegar
  • 2 cups water
  • 2 tbsp sugar
  • 1 1/2 tsp salt
  • 5 cloves garlic, minced
  • 1 medium onion, sliced
  • 2 thumb size ginger, strips 
  • 2 tsp turmeric (yellow powder)
  • cooking oil

HOW TO COOK ESCABECHE:
  • Fry fish and set aside.
  • In a pan or wok, saute ginger, garlic and onion. 
  • Add water, salt and sugar. Stir until sugar is dissolved. Add the vinegar. Do not stir. Bring to a boil.
  • When boiling, add the fried fish. Simmer for 5 minutes. 
  • Serve with hot rice.
  • Enjoy!
