Menudo 

Picture
Menudo is a pork dish with vegetables simmered in tomato sauce. Pork or beef liver can be also be added. Traditionally served during gatherings but is now served as a daily meal.

INGREDIENTS:
  • 1  1/2 lbs pork cut into strips or small chunks 
  • 1/2 lb pork liver (optional) 
  • 5 cloves garlic (minced)
  • 1 medium onion (minced)
  • 1/4 cup raisins
  • 1/2 cup garbanzos 
  • 1/2 cup potatoes (diced)
  • 1/2 cup carrots (diced)
  • 1/2 cup red bell pepper (diced)
  • 1 can, 8 oz  tomato sauce
  • 1 pork cube
  • cooking oil
  • 1 cup water           
  • 2 tbsp Fish sauce (Patis)

​HOW TO COOK:
  • Heat about 3 tbsp cooking oil in wok or large skillet/pan.
  • Pan fry the potatoes, carrots and bell pepper. Remove the vegetables from the pan then set aside.
  • Using the same wok or pan, add 2 tbsp cooking oil.
  • Stir fry garlic. Add onion and cook until translucent.
  • Add pork & liver. Simmer for about 5 minutes.
  • Add the fish sauce. Simmer for few minutes then add water. 
  • Bring to a boil then add pork cube. Cook until the meat is tender.
  • Add carrots, potatoes, garbanzos, bell pepper and tomato sauce. 
  • Simmer for about 5 minutes then add raisins. Cook until the sauce gets thick.
  • Remove from heat and transfer to a serving bowl.
  • Serve with hot steamed white rice.
