Mexican Style Barbecue

INGREDIENTS:
FOR THE DRY RUB:
  • 2T spanish or smoked paprika 
  • 1T chili powder
  • 2tsp iodized salt
  • 1T ground pepper black
  • 3 kilos ribs or liempo​
Mix all spices, make sure ribs are dry then rub with mixture.
​Set aside.


FOR SAUCE MIXTURE:
  • 2 med. Sized onions chopped 
  • 2 or 3 tomatoes chopped
  • 1 1/2 C sugar
  • 1C soysauce dark
  • 1C white wine

​PROCEDURE: 
  • Mix all spices, make sure ribs are dry then rub with mixture.
  • Grill the ribs that were rubbed with mixed spices. You may use a stove top grill or grill directly over charcoal. 
  • Place grilled ribs in heavy metal or glass baking dish. 
  • Pour a third of sauce mixture on top. Cover with aluminum foil. 
  • Broil in oven at 185 or 200 degrees celcius for 30 minutes. 
  • Remove from oven, turn ribs and pour in another third and return to oven. 
  • Repeat and pour the last third of the sauce. Broil another 30 minutes. 

Total broiling time is 1 hour and 30 minutes.
Serves 20 persons.
