Souffle' Pancake

​​INGREDIENTS:
  • 1/3 cup all purpose flour
  • 2 tsp sugar
  • 1/4 tsp salt
  • 2 egg yolks
  • 1/2 cup buttermilk or whole milk
  • 1 1/2 tbsp melted butter
  • 1 tsp vanilla extract
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • 1/2 tsp sugar
  • fruits of your choice e.g. banana, strawberries, blueberries 
  • powdered sugar for sprinkling​​
HOW TO PREPARE:
  • Preheat oven to 400 deg F.
  • Combine flour, sugar and salt. Set aside.
  • In a large bowl, whisk the egg yolks with the milk. 
  • Slowly add the flour mixture while whisking. 
  • Add melted butter and vanilla extract. Set aside.
  • In a separate mixing bowl, beat the egg whites and cream of tartar. 
  • Add the sugar. Beat until stiff.
  • Fold into the flour mixture. (Fold means using a spatula to combine the egg white and the batter).
  • Grease an 8-inch saute pan (make sure it has an oven proof handle) and place over medium high heat for about 45 seconds.​​

  • Pour batter into the pan and reduce the heat to low. Cook for 4 minutes.
  • Place the fruit on top of the pancake.
  • Place the pan in the pre-heated oven (middle rack) and bake for 4 minutes until the middle is just set. 
  • Turn the oven to broil, move the pan to the top rack and leave in the oven for 1 - 1 1/2 minutes. (just browning the top; keep an eye on your pancake, it might burn the top).
  • Remove from the oven and transfer to a serving plate.
  • Sprinkle with powdered sugar. 
  • Enjoy! 
***Makes one 8" pancake
