fruits of your choice e.g. banana, strawberries, blueberries
powdered sugar for sprinkling
HOW TO PREPARE:
Preheat oven to 400 deg F.
Combine flour, sugar and salt. Set aside.
In a large bowl, whisk the egg yolks with the milk.
Slowly add the flour mixture while whisking.
Add melted butter and vanilla extract. Set aside.
In a separate mixing bowl, beat the egg whites and cream of tartar.
Add the sugar. Beat until stiff.
Fold into the flour mixture. (Fold means using a spatula to combine the egg white and the batter).
Grease an 8-inch saute pan (make sure it has an oven proof handle) and place over medium high heat for about 45 seconds.
Pour batter into the pan and reduce the heat to low. Cook for 4 minutes.
Place the fruit on top of the pancake.
Place the pan in the pre-heated oven (middle rack) and bake for 4 minutes until the middle is just set.
Turn the oven to broil, move the pan to the top rack and leave in the oven for 1 - 1 1/2 minutes. (just browning the top; keep an eye on your pancake, it might burn the top).
Remove from the oven and transfer to a serving plate.
