Thai Chicken Recipe

INGREDIENTS:
1 Whole chicken (chopped)
250 grams coconut milk powder
1½ cups water
6 pcs lemon grass (cut each into 4 pcs)
1 tbsp. olive oil
1 onion (sliced)
1 tsp garlic (minced)
½ tsp. crushed dried chilies or pepper flakes
½ tsp. salt
¼ cups fish sauce
*** Substitute 2 cups coconut milk if coconut milk powder is not available and omit the water.
PROCEDURE:
In a large pot add olive oil, sauté garlic and onions.
Add chopped chicken, let it simmer for 10 minutes.
Add fish sauce and lemongrass, let it simmer for 10 minutes.
Dissolve coconut milk powder in 1 ½ cups water.
Add coconut milk mixture to the chicken and simmer for another 10 minutes.
Add crushed dried chilies or pepper flakes and salt.
Serve.
