Arrozcaldo

INGREDIENTS:
  • 5 cloves garlic, crushed
  • 1 medium onion, minced
  • 1 thumb size ginger, strips
  • 4-6 pieces chicken cuts
  • 1  1/2 tbsp fish sauce
  • 7 cups chicken broth OR 7 cups water+ 1 chicken cube
  • 1 cup glutinous or sticky rice (uncooked) or regular rice
  • ground black pepper to taste
  • 2 tbsp kasubha/saffron strands
  • 2-3 hard boiled eggs 
  • 1/2 cup green onions, minced
  • 5 cloves garlic (cooked in oil until brown and crispy for garnishing) 
  • cooking oil
  • ​lime or lemon juice

HOW TO MAKE ARROZCALDO:
  • In a wok with heated cooking oil, saute' garlic and cook until color turns light brown.
  • Add onion and ginger. Cook until onions are translucent. 
  • Add the chicken and cook until chicken turns light brown in color. 
  • Add the fish sauce. Cook for few minutes.
  • Add the chicken broth. Bring to a boil. 
  • Add the uncooked rice. Stir occasionally until the rice is cooked. 
  • Add saffron, ground black pepper and boiled eggs. Cook for 5 minutes.
  • Transfer to a serving bowl and top with green onions, fried garlic and squeeze some lemon. 
  • Serve and enjoy!​
