Chicken Cacciatore

INGREDIENTS:

  • 2 kilos chicken
  • 1/2 cup oil
  • 1 cup all purpose flour
  • 4 cups thinly sliced onion rings
  • 1 cup chopped green bellpepper
  • half a head of garlic, crushed
  • 2 cups chopped tomatoes
  • 16 ounces tomato sauce
  • 2 cans sliced mushrooms, drained
  • 3 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon oregano

PROCEDURE:
 
  • Wash chicken and pat dry. 
  • Coat chicken pieces with flour and fry in oil over medium heat till light brown. Remove chicken and set aside.
  • Saute garlic, onion rings until translucent, and green bell pepper. 
  • Cook and stir over medium heat. 
  • Stir in tomatoes and remaining ingredients, and add chicken to sauce. Cover tightly: simmer 30 to 40 minutes or until thickest pieces of chicken are fork tender. 
  • Serves 8.
