Escabeche Recipe

​INGREDIENTS:
  • 4-5 pieces Hasa-Hasa (Short-bodied Mackerel)  or 1 piece Apahap (Barramundi) or Tilapia - Fried
  • 1/2 cup vinegar
  • 1 cup water
  • 1/2 cup sugar
  • 1 tsp salt
  • 3-5 cloves garlic, minced
  • 1 medium onion, sliced
  • 2 thumb size ginger, strips 
  • 1 yellow/red bell/orange pepper, strips
  • 1 tsp yellow powder/turmeric powder
  • cooking oil for frying and sauteing

​HOW TO COOK ESCABECHE:
  • Fry fish and set aside.
  • Mix water, vinegar, sugar and salt. Set aside.
  • In a pan or wok, saute ginger, garlic and onion. 
  • Add vinegar mixture. Do not stir. Bring to a boil.
  • When boiling, add yellow powder, fried fish and bell pepper. Simmer for 5 minutes. 
  • Serve with steamed white rice.
  • Enjoy!
