Ampalaya Con Carne

​If you are looking for veggies in your meal, try this Ampalaya con Carne or Bitter Melon stir fried in ground pork pork or beef, diced tomatoes and egg. Simple, easy to make and delicious! 
Ampalaya is called Bitter melon because of its' bitterness so If you want to reduce the strong taste of this healthy vegetable, you can soak the sliced vegetables in water with some salt. I guarantee you, if you follow my procedure below, you won't taste the bitterness after making this meal.

sauteed bitter melon / ampalaya con carne recipe

INGREDIENTS:
  • 1 lb ground beef or pork
  • 2 medium Ampalaya (Bitter melon), sliced  
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 medium size onion, sliced
  • 1 or 2 eggs, beaten
  • 1/2 tsp ground black pepper
  • 1/2 tbsp fish sauce or salt to taste
  • cooking oil

HOW TO COOK:
  • Slice bitter melon into half and remove seeds. 
  • Slice diagonally and place into a bowl with salt to remove some bitterness. Soak for 30 minutes then drain the water. 
  • In a heated pan with cooking oil, saute garlic, onion and tomatoes. 
  • Add the ground beef or pork and cook until color turns brown.  Do not overcook the meat or it will be dry. 
  • Add fish sauce or salt to taste.  Simmer for about 2 minutes. 
  • Add the bitter melon. Do not stir. Cover and cook for about 3-5 minutes or until the bitter melon has slightly softened. Do not over cook or it will be soggy. 
  • Stir and add the beaten eggs and cook for another 2 minutes. 
  • Serve and enjoy!
