Chicken Cordon Bleu

INGREDIENTS:
  • 4 pieces boneless chicken breast, about 6 ounces each
  • 1/2 cup breadcrumbs
  • 12 slices thin sliced ham
  • 4 slices of cheese
  • 1 piece raw egg
  • oil
  • 1/4 teaspoon salt
  • 1/4 pepper
  • 1/2 cup flour

Sauce Ingredients:
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 2 chicken bouillon cubes
  • cream of mushroom (optional)

​PROCEDURE:
  • Place a piece of chicken breast in a flat surface then sprinkle some salt and pepper.
  • Top the chicken breast with ham slices followed by the cheese.
  • Start rolling the chicken breast from one end to the other. Make sure that it is tightly rolled. You may use a toothpick to fasten the end of the chicken breast to keep it from rolling back.
  • Dredge chicken in the 1/4 cup flour.
  • Dip it again in the egg.
  • Roll them in bread crumbs to coat well.
  • Place chicken rolls on a container. Cover and refrigerate them (I did it overnight).
  • Fry until brown on the outside and the cheese has melted on the inside or bake in the oven for 350 deg F for about 15-20 minutes.

SAUCE:
  • Add last 3 mixture.
  • Heat to just warm in microwave to help dissolve bouillon.
  • Melt butter in saucepan on low heat.
  • Add flour and stir until smooth and bubbly.
  • Add Milk mixture and heat.
