Chicken with Pickles & 
Hotdog Bits

INGREDIENTS:
  • 2 Kilos chicken pieces
  • 6 cloves crushed garlic
  • 2 medium sized onions, sliced
  • 2 medium sized tomatoes, sliced irregularly
  • 6 hotdogs (or more if you prefer) sliced diagonally into small pieces and fried
  • 2 large pieces sweet pickles, sliced diagonally
  • 2 cups tomato sauce or UFC banana catsup (or any sweet blend catsup)
  • 1/4 cup fish sauce or 3 teaspoons salt
  • 1 teaspoon ground pepper
  • MSG (optional)
  • 2 Tablespoons vegetable oil ​

PROCEDURE: 
  • In large pot, saute garlic in 2 tablespoons vegetable oil.
  • Add the onions and cook until translucent. Set aside in the pot, and add the tomatoes in, saute alone until wilted.
  • Then mix with the onion and garlic. Add in the chicken and fish sauce. Stir and cover. Let simmer 8 minutes or until chicken is slightly tender. 
  • Scrape off scum and chicken fat or oil from top of liquid. 
  • Add in the pepper, stir, then the pickles and stir again. Let simmer 3 minutes. 
  • Pour in the tomato sauce or catsup and let boil. Lower heat to simmer and add in the hotdogs and MSG, 3 minutes. 
  • Taste sauce. Add more fish sauce to desired taste. 
  • Turn heat off and serve with rice.
