Chocolate Cupcakes with Italian Buttercream Frosting ​

INGREDIENTS:
  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup Hershey's Cocoa, unsweetened
  • 1-1/2 tsp baking powder
  • 1-1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs, room temperature
  • 1 cup milk, room temperature
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

ITALIAN BUTTERCREAM FROSTING:
  • 4 large egg whites, room temperature
  • 1/4 tsp cream of tartar
  • 1 +  1/3 cup sugar
  • 2 cups unsalted butter, room temperature and cut into 1 small pieces
  • 1 tsp vanilla extract
  • 1/3 cup water

HOW TO PREPARE THE CUPCAKES:
  • Preheat oven to 350 degrees F.
  • Grease 24 count muffin pans or line with paper cups.
  • Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. 
  • Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. 
  • Stir in boiling water (batter will be thin). 
  • Pour batter into prepared muffin pan.
  • Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. 
  • Cool 5 minutes; remove from pans to wire racks. Cool completely.
  • Decorate your yummy cupcakes! ​
***Yields about 30 cupcakes.
*** Found this cupcake recipe at the back label of Hershey's cocoa. They are very soft and spongy. The best! ​​

HOW TO PREPARE THE FROSTING:
  • In a medium saucepan on medium-low heat, add 1 cup sugar and 1/3 cup water. Stir until sugar melts and becomes clear. 
  • Beat the egg whites. Add in the cream of tartar. 
  • Add the 1/3 cup sugar. Beat until the soft peak stage. 
  • When the temperature reads 235F-240F, drizzle the sugar mixture into the meringue immediately. Beat until the meringue is cool/tepid.
  • Add room temperature butter one tablespoon piece at a time.
  • Add vanilla or any other flavors. Beat until butter is combined and mixture has reached a silky consistency.
  • If adding colors, transfer the buttercream to multiple bowls. 
  • Add a drop of food coloring to each and mix.​
