Corned Beef with Potatoes

This recipe of Corned Beef with Potatoes is very easy to prepare.  Delicious if you get the best brand of corned beef. For me, Palm or Ox & Palm brands are the best. Serve it with fried eggs and steaming hot white rice or garlic rice, paired with fresh brewed coffee! 

Left overs can also be used as Pandesal filling or make Paradadas which is Pandesal filled with corned beef cooked in scrambled egg.

​INGREDIENTS:
  • 1 small potato, cubed
  • 4-6 cloves garlic, minced
  • 1 small onion, chopped or minced
  • 2 tomatoes, sliced
  • 1 can (11.5 oz) corned beef (I used Ox & Palm or Palm Brand )
  • cooking oil
  • salt to taste​

HOW TO PREPARE: 
  • Heat 2 tbsp of cooking oil in a pan or wok. 
  • Pan fry potatoes until tender. Remove from pan. Set aside.
  • Using the same pan, saute garlic, cook until color turns light brown.
  • Add onion. Cook until translucent then add tomatoes and cook for 3 minutes.
  • Add the corned beef. Stir to combine and cook for about 5 minutes. 
  • Season with salt according to your taste.
  • Best serve with white steamed rice and fried egg if you will be preparing it for breakfast. 
  • Enjoy :)
